Sick Girl, Cook, & BDay Planner


I feel like I haven't blogged in weeks! Hello everyone! You will be happy to know that I've finally gotten around to making my Chicken with Peanut Sauce (and Hoisin sauce). It was AMAZING! While it was in the pan I didn't even feel like I would like it. I tasted it and went "eh". Haha. Afterwards M's mom told me that she wanted some and I said, "um... I don't know..." and like always she goes "okay Q, okay" and handed me two bowls. Lol. So we both had it and absolutely LOVED IT! It was a bit on the spicy side but the hoisin sauce hit the spot.

Ingredients:
  • about 2 teaspoons of hoisin sauce
  • 6oz. chicken breast sliced or in cubes (I did cubes)
  • half a cup of spicy peanut sauce (any brand will do)
  • about 2-3 inches of a medium-sized cucumber
  • half a medium-sized carrot
  • half a package of vermicelli chinese noodles
  • 2 tablespoons of oil
  • 1/2 a medium-sized onion sliced or diced

The recipe that I used called for half a red pepper and half a green pepper but I was starting to come down with something and was not about to run out to the store, so I made due with a little extra cucumber, carrots, and onion.

I started with the oil in a non-stick pan with the chopped onions and chicken breast. After I got the onion golden brown I added the noodles (noodles were added to boiling water for 3 minutes then drained). This was my first time cooking with them. They were a little "gummy" and you could pull them for days, so I wasn't too sure. The package said that they are only meant to be fried, so it made more sense to me. I grated the cucumber and carrots on top of it then while it fried I stirred it every 30 seconds. In a cup I added the peanut sauce, hoisin sauce, and just about a teaspoon of oil (this was just because I wanted more in the noodles since I was frying them). I just tossed them and made sure that they were really fried and that the noodles soaked up the sauce.






I threw this one together today and didn't have the energy to add chicken or onion. It really took me about 5 minutes to cook it. As you can see from the picture with the ingredients, there is no onion or chicken, because I took the picture today :D hehe.

I enjoyed this dish after my nice HOT bath. I needed it. My whole body aches and I've had terrible chest pains. I took NyQuil before bed and had some lemon tea. This morning (well 12pm today because I went back to sleep) I had DayQuil and Chamomile tea. Sorry no pics on that, I was too weak to even make it, let alone take a few snaps.

Saturday night I went out with the girls. Here's a pic below. I woke up feeling horrible, I definitely should have had wine, beer, mixed drinks, and shots. Not a good idea. I had about one of each but still, it wasn't a good idea! Lol. I have the pics of the shots on my phone, will upload those later.


I wasn't too happy with this one but we had a good amount of drinks by this time and so that's my excuse! Haha.

I need to go wrap M's gift. I got him a Celtics shoot-around shirt (official by Adidas), and Friday after work we're going to get a couples massage. I can't wait. Now I need to go back to sleep.
